Protein Balls Recipe from Katheryn Scauzzo
Dietitian Katheryn Scauzzo shares a recipe for Protein Balls that she mentions in the live webinar, Eating Well During COVID-19. Prepare these ahead of time for a quick and healthy bite to grab when you’re having a low-energy spot.
- 1 cup dates (take out the pits)
- 1 1/2 cups almonds
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 scoop PALM Vanilla Protein Powder
- 1 tablespoon chia seeds
Mix all ingredients in a food processor, and blend on low until the almonds have been broken down.
Spoon out 1 tablespoon of the dough at a time and roll into balls. Place on a cookie sheet.
Refrigerate for 30 minutes, and enjoy!
Any leftover Protein Balls may be placed in an airtight container and kept in the refrigerator.
